Pizza Dough:
500 grams of flour – 1 pinch of salt – 4 tbsp olive oil – 20 grams of fresh yeast or 7 grams of dried yeast – 250 ml of lukewarm water
Mix the flour with the salt and oil in a bowl. Dissolve the fresh yeast in lukewarm water until smooth, then combine with the flour. Alternatively, mix dried yeast with the flour, then add the oil and lukewarm water. Knead everything into a smooth dough. A mixer with dough hooks or a food processor works wonders for this.
Cover the bowl with a cloth and let it rise for about 45 minutes until it doubles in volume. Sprinkle the dough with flour and roll it out to about 3mm thickness, turning it occasionally and dusting with flour to prevent sticking. Cut out rounds with a cutter, stacking them on a plate or board with extra flour to prevent sticking together. While the dough rises, you can prepare the other ingredients.
Pizza tomato sauce ingredients
1 can of peeled tomatoes
1 small can of tomato paste
salt, pepper, oregano
2 tablespoons of olive oil
2 crushed cloves of garlic
Mix all these ingredients, crush with a mixer if necessary. You can add extra herbs, but remember that this is a basic sauce and should not be overpowering. Otherwise all pizzas will taste the same. It is better to place containers with herbs on the table so that everyone can determine the taste of their home-baked mini pizzas.
The beauty of pizza lies in its endless possibilities. You can go as extravagant as you wish, with luxurious toppings like caviar, truffles, and salmon. However, simplicity often shines just as brightly. After all, pizza is a beloved national dish in Italy, where fresh and authentic ingredients reign supreme. Here’s a tip: keep it to three toppings maximum, in addition to sauce and cheese. If using mozzarella, just one piece in the center is usually ample for a Pizzarette pizza :). Need some inspiration? How about tomato sauce, mozzarella, grated Parmesan, Gouda, fresh basil, arugula, olives, mushrooms, anchovies, capers, pineapple, artichoke hearts, bell pepper, onion rings, tomatoes, ham, salami, chorizo, smoked salmon, canned tuna, sardines, shrimp, or quail eggs… The options are limitless—let your taste buds lead the way!
